CITRUS HEIGHTS, CA (MPG) – Local butcher, Edgar Figueroa is a cut above the rest. In November, he sliced away the competition, in the first round of the regional meat-cutting qualifier. Edgar headed to the semi-finals round, in Nashville, where he is to compete against 82 of the best butchers in the country, in the National Meat Cutting Challenge.

“Edgar takes great pride in meat cutting and excels at the craft,” says Managing Partner, Joseph Sevier. “He truly cares about perfecting each steak, but more than that, he cares about every guest who walks in our restaurant to enjoy a hand-cut steak. He adds so much value to our team, in the meat room, and across every part of our restaurant operations.” 

After growing up in Southern California, Edgar started working at the Citrus Heights Texas Roadhouse in 2018. He began cutting meat about a year ago and competes in the national competition for the first time.

“Edgar also has a big heart,” Joseph continues. “He’s positively impacted people’s lives through his leadership and has spoken at the Citrus Heights Rotary Club to spread our message about community involvement.”
